5 ½ cups vegetable broth
1 cup golden raisins
1 cup uncooked wild rice
1 cup uncooked brown rice
1 cup sliced almonds
¼ teaspoon salt
¼ teaspoon pepper
1/3 cup minced fresh cilantro
Vegetable oil for cooking
In a small saucepan, boil ½ cup of broth. Remove from heat, add raisins and allow mixture to cool while raisins are soaking in broth. In a large saucepan or pot, boil 3 cups of broth before adding wild and brown rice. Reduce heat to allow rice to simmer until cooked. Remove raisins from broth and place remaining broth in pot with rice. Sauté the sliced almonds in oil until they are lightly browned. In a large serving bowl, place almonds, cilantro, salt, pepper, wild rice, brown rice and raisins. Stir to combine and serve hot.
