2 cups cooked rice
6 carrots
½ cup unsalted, roasted sunflower seeds
1 ½ cups unsalted walnuts
1 cup unsalted, roasted cashews
1 onion
1 minced garlic clove
Salt and black pepper to taste
Preheat oven to 425 degrees F and oil two baking sheets. Grind sunflower seeds, walnuts and cashews in food processor until as finely ground as possible. Remove nut mixture from food processor and place in mixing bowl. Wash and prepare all vegetables before placing in food processor and processing until all veggies are finely diced. Remove veggies from food processor bowl and add to mixing bowl with nut mixture. When rice is cooked and cooled to room temperature, pulse in food processor until smooth. If necessary, process rice in batches until the entire amount is smoothed. Place rice in bowl with other ingredients and mix together until well combined. Add salt and black pepper as desired. Form veggie burger patties by compacting rice mixture with your hands and forming burger shapes. Place burgers on oiled baking sheets and put in preheated oven. Bake veggie burgers for about ten minutes, or until top is browned, before flipping burger patties and cooking on other side. When burgers are browned on both sides, remove from oven, cool slightly and serve on hamburger buns with your favorite condiments and raw veggies.
