Vegan Veggie Burgers

INGREDIENTS AND DIRECTION
3 pounds cooked black beans
¼ cup peanut butter
¼ cup diced onion
½ cup diced red bell pepper
1 teaspoon cayenne pepper
1 teaspoon cumin
1 cup cooked quinoa
2 tablespoons chopped cilantro
2 tablespoons olive oil
 
Place all ingredients except peanut butter into a food processor and process until mixture reaches desired consistency. Drain any excess liquid from food processor bowl and add peanut butter. Process again until peanut butter spread throughout. Remove from food processor bowl (avoid the blades!) and form patties. Heat oil in pan and cook patties entirely on each side.
NOTE
The peanut butter makes the mixture sticky and easier to shape into patties. If you prefer, use egg substitute instead of peanut butter. These patties are also good served with lettuce leaves instead of a bun for those on gluten free diets or no carb diets.
