3 pounds cooked black beans
¼ cup peanut butter
¼ cup diced onion
½ cup diced red bell pepper
1 teaspoon cayenne pepper
1 teaspoon cumin
1 cup cooked quinoa
2 tablespoons chopped cilantro
2 tablespoons olive oil
Place all ingredients except peanut butter into a food processor and process until mixture reaches desired consistency. Drain any excess liquid from food processor bowl and add peanut butter. Process again until peanut butter spread throughout. Remove from food processor bowl (avoid the blades!) and form patties. Heat oil in pan and cook patties entirely on each side.
