2 or 3 ripe avocados
1 tablespoon lemon juice
1 small cucumber
2 tablespoons chopped onion
2 cups vegetable broth
1 teaspoon salt
Pepper to taste
Plain soy yogurt to garnish (optional)
Remove pits and skin from avocado flesh and place flesh in food processor. Add lemon juice and process until smooth. Peel cucumber, cut in half lengthwise and scoop seeds out with a spoon. Place cucumber flesh and onion in food processor with avocado and process until smooth again. In a large metal bowl, combine processed avocado mixture with vegetable broth. Add salt and pepper and whisk thoroughly. Place in refrigerator to chill for at least 3 hours. Serve in individual bowls with dollop of yogurt in center.
