2 cups flour
4 teaspoons baking powder
¼ teaspoon baking soda
¾ teaspoon salt
1 tablespoon vegetable oil
2 tablespoons soy margarine
1 cup cold soy milk
Preheat oven to 450 degrees and oil a baking sheet. In a mixing bowl, combine flour, baking powder, baking soda and salt. Place soy margarine into flour and cut in with two knives. Try to get the margarine into as small pieces as possible. Mix soy margarine pieces and flour mixture until the shortening pieces are spread throughout the flour mixture. Add vegetable oil and soy milk to the flour mixture and stir together. Place dough on floured firm surface and knead dough. Try to knead the dough as little as possible while making the dough the same texture. Gently flatten dough until ½ inch thick and use either the top of a glass or a cookie cutter to cut out biscuit shapes. Place biscuits on baking sheet and place in oven for 10 to 15 minutes or until golden brown. Cool on wire racks until they are a reasonable temperature for eating. Serve warm.
