½ cup vegetable shortening
2 cups sugar
½ cup water or soymilk
2 tablespoons cocoa
½ cup peanut butter
2 cups oatmeal
1 cup shredded coconut
Place sheets of wax paper on countertop to drop cookies on. Place shortening, sugar, peanut butter, soy milk and cocoa in a cold saucepan. Slowly raise temperature on the stove until peanut butter and sugar are fully dissolved. Stir in oatmeal and coconut. Drop by spoonfuls on wax paper and allow cookies to harden. Serve when cooled.
