INGREDIENTS AND DIRECTION
1 cup black beans
1 cup pinto beans
1 cup navy beans
1 cup great northern beans
1 cup red kidney beans
1 cup butter beans
1 cup baby lima beans
1 cup lentils
1 cup chickpeas
1 cup green split peas
1 cup yellow split peas
1 cup black eyed peas
Pick through all dried beans, place in a container and mix them. When ready to use, rinse before soaking overnight and cooking.
NOTE
If you have not soaked the beans in advance, try this technique. In a pressure cooker, place 3 cups water for 1st cup of beans and 2 cups of water for additional cups of beans. Also add a ½ tablespoon of vegetable oil for each cup of beans. Lock pressure cooker lid and place on high heat. Once the pressure cooker is pressurized, cook for 2 or 3 minutes on high pressure. Remove from heat and let temperature decrease until pressure cooker can be opened. This will cook the smaller beans and partly cook the larger ones. Add additional cooking time as necessary to make sure all beans are fully cooked.
