INGREDIENTS AND DIRECTION
Sponge Cake
 
1 ¼ cups flour
1 ½ teaspoon baking powder
½ teaspoon salt
2 eggs
¾ cup sugar
1/3 cup water
1 teaspoon vanilla
½ teaspoon lemon juice
 
Vanilla Sauce  (Serves 6)
1 ½ cups heavy whipping cream or half and half
4 tablespoons confectioner’s sugar
1 ½ teaspoons vanilla extract
 
1 Bag of frozen mixed berries (strawberries, raspberries, blueberries)
 
1. Make Sponge Cake
Preheat oven to 350 degrees and oil a square 9” by 9” baking pan. Combine flour, baking powder, sugar and salt in a medium sized bowl and set aside. In a second bowl beat eggs until they are lemon-colored throughout. Slowly add sugar to the eggs and beat with an electric mixer until smooth. Add vanilla, water and lemon juice to the egg mixture. Add the flour mixture to the other ingredients. Pour into a baking pan and bake for about 25 minutes. Allow to cool completely before removing from pan. Cut into squares and set aside.
 
2. Make Sauce
Mix cream, confectioner’s sugar and vanilla extract until fully combined.
 
3. Assemble deserts
Take a small decorative dish or cup and place 5-6 cake cubes in the dish. Add a few frozen berries to the dish. Pour ¼ cup of cream sauce over cake and berries.
NOTE
This is a great party desert. You can make the sponge cake the night (or morning) before the party and place the cubes and berries in the serving dishes before serving the meal. Pour the cream over the desert just before serving.
