1 ¼ cups flour
1 ½ teaspoon baking powder
½ teaspoon salt
2 eggs
¾ cup sugar
1/3 cup water
1 teaspoon vanilla
½ teaspoon lemon juice
Preheat oven to 350 degrees and oil a square 9” by 9” baking pan. Combine flour, baking powder, sugar and salt in a medium sized bowl and set aside. In a second bowl beat eggs until they are lemon-colored throughout. Slowly add sugar to the eggs and beat with an electric mixer until smooth. Add vanilla, water and lemon juice to the egg mixture. Add the flour mixture to the other ingredients. Pour into a baking pan and bake for about 25 minutes. Allow to cool before serving with whipped cream and fruit.
