2 cups fresh spinach
1 cup fresh sliced mushrooms
3 tablespoons olive oil
2 cloves minced garlic
2 eggs
2 teaspoons lemon juice
8 inch pastry shell
Scant ¼ teaspoon salt
½ teaspoon pepper
Preheat oven to 350 degrees F and place the pan with the pastry shell on a baking sheet to avoid drips. Place1 ½ tablespoons oil in a skillet and cook spinach over high heat until wilted. Let spinach cool. Cook mushrooms and garlic in remaining olive oil until vegetables soften. Once mushrooms and garlic are cool, mix with cooled spinach and place in pastry shell. In a separate bowl, whisk eggs, cream, salt and pepper together and pour into pastry shell. Place in oven and bake for 30 minutes or until quiche is golden brown and eggs are fully set. Serve warm.
