Muffin Batter:
1 cup sugar
¼ cup softened butter
1 egg
2 ½ cups flour
2 teaspoons baking soda
1 teaspoon nutmeg
½ teaspoon cinnamon
¾ cup milk
Walnut Topping:
¼ cup sugar
½ cup walnuts
¼ teaspoon cinnamon
¼ teaspoon nutmeg
Preheat oven to 375 degrees and oil the cups of a muffin pan. In a large bowl, cream the sugar and butter with an electric mixer. After the sugar mixture is smooth, add the egg and beat until thoroughly combined. In a separate bowl, mix together the baking soda, nutmeg and cinnamon. Slowly add the flour and milk to the sugar mixture. If lumps begin to form, add some milk. When all of the ingredients are mixed together, you should have a thick batter. Use a tablespoon to drop the batter into each muffin cup until each cup is ¾ full. Make the nut topping by placing sugar, walnuts, cinnamon and nutmeg into a food processor bowl. Pulse the mixture until the nuts are finely chopped. Use teaspoon to drop some walnut topping onto each muffin. Bake for approximately 25 minutes until lightly browned.
