2 pounds spinach
1 pound phyllo dough
½ cup feta cheese
1 chopped onion
2/3 cup vegetable oil
4 to 6 chopped scallions
2 to 3 eggs
1 cup melted butter
1/2 tsp salt
Clean, wash, and drain spinach well. Sauté the onions in a large pot with ½ cup of oil then add spinach and dill. Remove from heat and add cheese. Pre-heat oven to 350 degrees and use remaining oil to grease baking pan. Put in half of phyllo dough into pan, buttering each sheet. The phyllo dough should come up above the top of the pan. Spread the spinach and cheese mixture on top and fold over the bottom phyllo sheets. Cover with remaining phyllo, buttering each sheet. Score the top sheets of dough with a sharp knife. Bake in oven for approximately 1 hour. Serve hot or cold.
