2 ½ cup dry mayacoba beans
16 cups water
½ cup chopped onion
2 minced garlic cloves
Salt and black pepper to taste
Cook beans in lightly salted water until fully cooked. Meanwhile, in a heavy bottomed frying pan, cook onion and garlic in a small amount of vegetable oil. Drain the cooked beans and place in frying pan with onion mixture. Take potato masher and mash beans in frying pan with onion mixture until smooth. Heat the beans and onion mixture before tasting. Add salt and pepper as needed. Serve warm.
