1 cup soy milk
1 teaspoon apple cider vinegar
1 ¼ cups flour
1 cup sugar
2 tablespoons baker’s chocolate
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¼ cup vegetable oil
2 teaspoons vanilla
1 ½ tablespoons applesauce
Red food coloring
Confectioner’s sugar
Preheat oven to 350 degrees F and oil the cups of a standard sized muffin pan. Pour soy milk and apple cider vinegar into a container and set aside for 10 minutes or until it curdles. Combine flour, baking powder, salt, sugar, chocolate and baking soda in a large bowl and stir together. Add applesauce, vanilla and vegetable oil to flour mixture and blend well. Make sure there are no lumps before going to next step. Add food coloring until you get the color red you want for your cupcakes. The easiest way to fill the cups with batter is to pour the batter from the mixing bowl into a liquid measuring cup and then pour into individual cups in muffin pan. Fill each cup 2/3 to ¾ full of batter and place in oven for 20 to 25 minutes at 350 degrees F. Remove cupcakes from pan and allow them to cool entirely on cooling racks before sprinkling confectioner’s sugar on top of cupcakes for decoration.
