2 cups cooked red potatoes
3 or 4 tablespoons of regular mayonnaise or vegan mayonnaise
3 chopped scallions
1 tablespoon parsley
1 tablespoon chives
Allow potatoes to cool entirely and cut into bite sized chunks. Mix mayonnaise, scallions, parsley and chives together. Coat potatoes with mayonnaise mixture and chill a few hours in refrigerator. Serve cold.
