¾ cup plain soy yogurt
2 ½ cups vegetable broth
1 cup dried lentils
½ teaspoon curry powder
2 teaspoons vegetable oil
1 sliced onion
2 tablespoons cilantro
Dash of cayenne pepper
Combine broth, lentils, curry and cayenne pepper and bring to a boil. Reduce heat and simmer lentils until they are tender. In a frying pan, heat oil and cook onions until they are translucent. Stir cilantro into lentils when they are done. Spoon lentils into individual plates and top with onions and yogurt.
