1 cup flour
1 cup rolled oats
2/3 cup brown sugar
¼ teaspoon baking soda
1/3 to ½ cup vegetable oil
Raisin filling
½ cup water
2 tablespoons sugar
2 teaspoons cornstarch
1 cup raisins
Preheat oven to 350 degrees and oil a 9x9x2 inch baking dish. Place dry ingredients in a bowl and mix together. Add vegetable oil to dry ingredients and stir together. Reserve ½ to 2/3 cup of oatmeal mixture for topping and press the rest into oiled baking pan. Make sure the pressed oatmeal is even on top before adding filling. To make filling, place water, sugar and cornstarch in a pot and stir. Add raisins and cook until thick and bubbly. When filling is cooked, spread on top of oatmeal mixture and let cool. Once filling is cooled, press remaining oatmeal mixture evenly on top of raisin mixture. Place in preheated oven for 30 minutes or until top is lightly browned. Cut into squares and let cool in pan. Place individual servings in a dish and serve with ice cream.
