¼ cup lime juice
¾ teaspoon black pepper
¼ teaspoon salt
¼ cup olive oil
3 cups water
1 ½ cups quinoa
¾ cup peeled, seeded, diced cucumber
¾ cup seeded, diced tomato
¾ cup sliced red bell pepper
¼ cup sliced yellow bell pepper
¼ cup thinly sliced onions
¼ cup chopped parsley
¼ cup chopped mint
Additional salt and pepper to taste
Whisk lime juice, white pepper, black pepper, jalapeno, coarse salt and olive oil together and set aside. Wash quinoa under running water and drain. Put 3 cups fresh water and quinoa in a pot and bring to a boil. Reduce heat and let quinoa simmer until almost tender. Drain quinoa and allow it to cool. Chop vegetables and when quinoa is cool, stir in vegetables and lime juice mixture. Add additional salt or pepper if needed. Serve at room temperature or cold.
