½ cup vegetable broth
2 tablespoons ground ginger
2 tablespoons soy sauce
3 tablespoons peanut butter
1 tablespoon of honey
4 minced cloves garlic
8 ounce package of Udon noodles
¼ cup finely diced onion
1/3 cup chopped peanuts
Cook noodles according to package directions, drain and allow noodles to cool. Combine broth, ginger, soy sauce, peanut butter, honey, garlic and onion in a cold saucepan. Gently heat saucepan while stirring until peanut butter melts and vegetables are softened. Pour warm sauce over noodles and toss the noodles until fully coated. Let cool to room temperature before refrigerating until cold. Serve cold with chopped peanuts as garnish.
