Oatmeal Whole Wheat Raisin Bread

INGREDIENTS AND DIRECTION
1/3 cup oats
1/3 cup raisins
3 tablespoons brown sugar
1/3 teaspoon salt
½ cup warm water
1/3 cup whole wheat flour
1 ½ cup all purpose flour
1 package active dry yeast
 
Combine oats, raisins, brown sugar, salt, whole wheat flour and all purpose flour in a bowl.
 
Combine whole wheat flour, salt and all purpose flour in a bowl and mix together. Stir raisins into flour mixture and then add oats and brown sugar. Mix and set aside Heat ½ cup water to 105 to 115 degrees F and add dry active yeast. Stir yeast and water until dissolved then pour into dry ingredients. Mix ingredients together until dough forms. Remove dough from bowl and place on a flat floured surface. Knead dough for 5 minutes then set aside to rise. Allow dough to rise until doubled in size then punch down. Form a bread shape with the dough and allow dough to rise again on an oiled baking sheet. When dough has doubled in size for second time, place in the center of a preheated oven (375 degrees F) and bake for 30 minutes or until done. Bread is done when tapped on the bottom produces a hollow sound.
NOTE
This bread takes a little longer than usual to rise to due to the weight of the oatmeal. To decrease the rising time, use warm water and place somewhere without drafts. The taste of the bread is worth the small amount of extra time needed for the yeast to do its work.
