1 cup vegetable shortening
¾ cup sugar
¾ cup brown sugar
2 eggs
1 teaspoon vanilla flavoring
1 ¾ cups flour
½ teaspoon salt
1 teaspoon baking soda
2/3 cup of quick cooking oatmeal
6 ounces of chocolate chips
Preheat oven to 350 degrees. Combine shortening, sugar and brown sugar in a bowl and cream together. Beat in eggs and vanilla flavoring. Mix together flour, salt and baking soda in a second bowl. Slowly add flour mixture while stirring shortening and egg mixture until all of the flour mixture is added. Add oatmeal and chocolate chips to other ingredients. Grease cookie sheets with cooking oil. Use two spoons to form and drop cookie dough balls onto the baking sheet. Leave at least 1 ½ inches between each dough ball for cookies to spread while baking. Bake 12-15 minutes or until fully cooked.
