2 teaspoons extra virgin olive oil
1/3 cup chopped onion
3 cups fresh sliced mushrooms
1 tablespoon thyme
½ cup vegetable broth
Place oil in pan and when hot add onions. Cook onions until slightly softened, then add mushrooms, thyme and pepper. Cook for a minute then add vegetable broth. Cook until all vegetables are soft and the fluid is reduced. Serve hot.
