2 cups cooked red potatoes
4 chopped scallions
2 tablespoons lemon juice
2 tablespoons olive oil
½ teaspoon dry mustard
Salt and pepper to taste
Allow potatoes to cool entirely then cut into bite sized pieces. Whisk the lemon juice, olive oil, mustard, salt and pepper. Taste and adjust seasonings ad desired. Pour mustard mixture over potatoes and toss to coat. Chill for a few hours before serving cold.
