Crust
1 cup softened butter
½ cup powdered sugar
2 cups flour
Dash of salt
Lemon Topping
4 beaten eggs
¼ cup flour
2 cups granulated sugar
6 tablespoons lemon juice
Rind from one lemon
Preheat oven to 350 degrees and grease a 9” x 13” pan with oil, butter or non-stick cooking spray. Make crust by combining butter, sugar, flour and salt. Press crust firmly into pan and bake for approximately 15 minutes or until the crust is a light brown color. Make the lemon topping by mixing the flour and sugar together before adding the eggs, lemon juice and lemon rind. When the crust is the appropriate color, allow it to cool slightly before pouring lemon topping on it. Bake topping and crust at 350 degrees until filling is set and toothpick or cake tester inserted in center comes out clean. Allow to cool before cutting cookies to desired size.
