1 egg
1 cup milk
¼ cup vegetable oil
2 cups flour
¼ cup sugar
3 teaspoons baking powder
1 teaspoon salt
Your favorite type of fruit jelly (strawberry, apple, apricot, raspberry, etc.)
Preheat oven to 400 degrees F and oil a 12-cup muffin pan. Combine sugar, flour, baking powder and salt in a bowl and set aside. Beat egg in a separate bowl. Then add milk and vegetable oil to beaten egg. Combine egg mixture to flour mixture and beat until combined. Pour or spoon batter into muffin cups until cups are ½ full. Place a small amount of jelly into each cup. Then add additional batter to the cups to make them 2/3 full Bake 20 to 25 minutes or until muffins are fully cooked and lightly browned.
