INGREDIENTS AND DIRECTION
1 15 ounce can of no salt added black beans
1 seeded, chopped tomato
¼ cup chopped fresh cilantro
1 small jalapeno pepper
1 yellow bell pepper
1 red bell pepper
1 green bell pepper
Cut stem off jalapeno pepper before slicing lengthwise. Remove seeds from hot pepper and finely dice remaining part. Take can of beans and drain fluid. Place beans in a bowl and partially mash them with a fork. Add diced jalapeno, chopped cilantro and chopped tomato to partially mashed black beans. Cut bell peppers in half lengthwise then remove stems and seeds. Cut each bell pepper half lengthwise into about 4 or 5 slices. Serve bell peppers on tray next to dip.
NOTE
By using beans without salt added this recipe is great for people with hypertension. And using the bell pepper slices instead of chips will appeal to those on gluten free diets.
