5 eggs
¾ cup regular milk
1/3 cup diced onion
1 cup grated Swiss cheese
¼ cup grated cheddar cheese
2 teaspoons chopped fresh basil
1/3 cup chopped sweet red bell pepper
1/3 cup chopped green bell pepper
1/3 cup sliced mushrooms
Salt and black pepper as desired
Crust
3 cups thawed frozen hash browns
½ cup melted soy margarine
Preheat oven to 325 degrees F and spray a pie plate with non-stick cooking spray. Mix hash browns and soy margarine together and press mixture onto sides and bottom of pie plate. Beat the eggs for 2 minutes with a mixer on low speed. Add milk, swiss, cheeses, basil, peppers, salt and pepper. Stir egg mixture then pour onto crust. Bake 45 minutes or until a toothpick inserted in the center comes out clean.
