1 cup gluten free flour mixture (recipe below)
1 teaspoon baking powder
2 teaspoons vanilla extract
2 beaten eggs
1 cup milk
Mix gluten free flour mixture and baking powder together in a bowl. Add eggs, oil, vanilla and milk to the flour mix. Whisk until fully combined. Heat an oiled frying pan and when hot, pour small amounts of batter to make individual pancakes. Cook until one side browned and bubbles visible on uncooked side. Then flip over and cook other side. Serve hot with maple syrup.
