¼ cup vegetable oil
2 beaten eggs
½ cup milk
1 ½ teaspoons xanthan gum
1 cup sugar
2 teaspoons baking powder
Topping
½ cup brown sugar
2 teaspoons cinnamon
3 tablespoons melted butter or soy margarine
Preheat oven to 375 degrees F and spray a 9 inch square pan with nonstick spray. Combine oil, eggs and milk in a large bowl. In a separate bowl, mix gluten free flour mixture, xanthan gum, sugar and baking powder. Slowly stir sugar mixture into egg mixture. Pour batter into square pan. In the empty bowl that used to hold the flour mixture, mix brown sugar, cinnamon and melted butter. Sprinkle brown sugar topping on batter in pan. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
