6 cups fresh baby spinach
1 ripe diced pear
1 cup fresh raspberries
2 tablespoons crumbled blue cheese
1 tablespoon balsamic vinegar
2 teaspoons olive oil
1 teaspoon Dijon mustard
¼ teaspoon black pepper
In a large bowl, place washed baby spinach, raspberries, pear and blue cheese. In a small bowl, whisk vinegar, olive oil, Dijon mustard and pepper until well combined. Pour Dijon dressing over spinach mixture and toss to coat. Place salad on individual plates and serve cold.
