¼ cup sugar
1/3 cup lemon juice
4 medium apples
1 12 ounce can of mandarin oranges
1 grated carrot
½ cup raisins
To make dressing, place sugar and lemon juice in a saucepan. Cook on low heat while stirring until the sugar has dissolved. Remove dressing from heat and allow to cool. Peel and core apples before dicing them. Drain fluid from mandarin oranges and place in bowl with diced apples and grated carrot. Add raisins and dressing and toss until everything is coated. Cover and refrigerate for at least 5 hours before serving cold.
