1 cup cooked and drained pasta
1 tablespoon vegetable oil
1 large thinly sliced cucumber
1 diced onion
1 ¼ cups sugar
1 cup water
½ cup white vinegar
1 tablespoon regular mustard
1 tablespoon minced cilantro
1 teaspoon salt
½ to 1 teaspoon ground black pepper
Additional salt and black pepper to taste
After pasta is drained, rinse in cold water until pasta is below room temperature. Place pasta in serving bowl with oil and toss to coat before adding cucumbers and onion. In a separate bowl, whisk together, sugar, water, vinegar, mustard, cilantro, salt and pepper to make dressing. Taste dressing and adjust seasonings as necessary. Pour dressing over salad and toss to coat. Cover and refrigerate for at least 4 hours. Stir and serve cold.
