2 cups of drained canned corn
1 ½ cups sifted all purpose flour
2 teaspoons baking powder
¼ teaspoon salt
2 tablespoons sugar
2 beaten eggs
½ to 1 cup milk
Vegetable oil for frying
Mix together flour, baking powder, salt and sugar and set aside. Combine beaten eggs, milk and corn. Add to dry ingredients and stir until moist batter is formed. Use a tablespoon to drop batter into deep hot oil for frying. Allow to fry until golden brown. Drain on paper towels, let cool slightly and serve warm.
