½ cup chopped onion
¾ to 1 cup vegetable broth
¼ cup raisins
1 tablespoon coriander
1 bay leaf
1 ½ pounds carrots cut into rounds
Salt and black pepper to taste
Vegetable oil for cooking
Heat oil in a pot and cook onions until softened. Carefully add broth, raisins, coriander, bay leaf and carrots. Bring to a boil, then reduce to a simmer. Cook until carrots are done.
