3 tablespoons vegetable oil
1 teaspoon cumin seeds
1pinch turmeric
2 cloves
4 black peppercorns
2 black or brown cardamom pods
2 cups dried coconut
2 cups brown rice
4 cups vegetable broth
1 tablespoon chopped almonds
1 tablespoon cashews
1 tablespoon raisins
Salt to taste
Heat oil in a heavy pot and sauté cumin until browned. Add turmeric, cloves, peppercorns and cardamom. Stir for about a minute before adding coconut. Saute coconut until golden. Add rice and sauté over medium heat for a couple of minutes. Pour in vegetable broth, add salt and bring to a boil. Lower heat, cover and cook until rice is cooked. Stir in cashews, raisins and almonds. Serve warm.
