½ cup shredded coconut
¼ cup bread crumbs
1 cup milk
2 eggs
1 tablespoon soy margarine
2 tablespoons sugar
pinch of salt
Preheat oven to 350 degrees F and oil a pie pan. Place coconut, bread crumbs, milk, eggs, soy margarine, sugar and salt into a food processor and process until smooth. Pour into prepared pie pan. Bake pudding in oven for an hour or until cooked throughout. Remove from oven and let cool before refrigerating. Serve cold.
