2 pounds sweet cassava
Remove skin from cassava and grate finely. Squeeze juice from grated cassavas. Rub cassava until it no longer has lumps and appears flour like. Place in an oiled skillet over low heat and form a large pancake with the cassava flour. When the cooked side holds its shape easily, carefully flip over and cook other side. Place pancake in 350 degree oven for about 15 minutes or until pancake is fully cooked.
