Brown Rice with Spinach, Raisins and Pine Nuts

INGREDIENTS AND DIRECTION
2 to 2 ¼ cups vegetable broth
1 cup long grain brown rice
1 tablespoon minced fresh ginger
1/3 cup raisins
1/3 cup pine nuts
1 cup cooked spinach
Ground nutmeg to taste
Salt and black pepper to taste
 
Bring broth to a boil in a pot before adding rice, ginger, raisins, and 2 tablespoons of pine nuts. Cook until rice is done. Stir in spinach and nutmeg. Taste and adjust seasonings as necessary.
