½ cup lemon juice
4 minced garlic cloves
¼ cup olive oil
3 cups cooked rice
15 ounce can of garbanzo beans
½ cup chopped parsley
¼ cup chopped dill
½ cup diced onion
½ cup diced roasted red peppers
Salt and black pepper to taste
Whisk together lemon juice, garlic, olive oil, salt and pepper to make dressing and set aside. Drain garbanzo beans and place in a large bowl with cooked, room temperature rice, parsley, dill, onions and red peppers. Mix ingredients in large bowl, then pour dressing over rice mixture. Let sit two hours in refrigerator before serving. Serve cool or cold.
