½ cup finely chopped onion
½ teaspoon minced garlic
1 cup long grain brown rice
2 cups vegetable broth
1/3 cup finely chopped sun dried tomatoes
1/3 cup fresh basil
Salt and black pepper to taste
Vegetable oil for cooking
Heat oil in pot and cook garlic and onions until softened. Carefully add broth and rice to pot and bring to a boil. Reduce to a simmer and cook until rice is done. Add salt and pepper, taste and adjust seasonings. Stir in sun dried tomatoes and basil before serving.
