1 pound fresh okra
3 tablespoons vegetable oil
1 ½ tablespoon coriander
½ teaspoon cumin
½ teaspoon paprika
½ teaspoon garam masala
1/2 teaspoon turmeric
Salt and pepper to taste
Wash and dry okra. Trim the bottom and top of each okra and slice into rounds half an inch thick. In a large skillet, heat the vegetable oil and add the okra in a single layer. Cook over a moderate heat for twenty minutes while stirring occasionally. Add the spices and continue to stir and cook until the okra is golden brown. Remove from heat, sprinkle with salt and pepper before serving.
