½ cup vegetable shortening
¾ cup brown sugar
2 tablespoons white vinegar
3 ripe mashed bananas
3 tablespoons water
1 tablespoon lime juice
½ teaspoon salt
½ teaspoon ground ginger
¾ cup grated coconut
1 teaspoon baking powder
2 cups white flour
GLAZE
1/4 cup brown sugar
1 tablespoon vegetable oil
1 tablespoon rum
3 tablespoon lime juice
Preheat oven to 350 degrees F and prepare a loaf pan for baking. Place shortening in a large bowl and beat for a few seconds. Add the brown sugar and beat until creamy. Add mashed bananas, vinegar, water and lime juice salt, ginger, baking powder and grated coconut one at a time and mix until well combined. Add flour and beat until smooth. Pour batter into an oiled loaf pan and bake for 1 hour or until toothpick inserted into the middle of the loaf comes out clean. Allow loaf to cool on wire rack after it is removed from oven. When loaf is cool, make the glaze by combining brown sugar, oil, rum and lime juice in a small pan over low heat. Stir constantly until you have a thin syrup. Pour syrup over cooled loaf and allow glaze to run over the sides.
