2 cups unsalted, shelled walnuts
2 cloves garlic
1 large onion
1/2 cup chopped celery
1 teaspoon chopped parsley
1 teaspoon chopped cilantro
4 slices of toast
2 teaspoons seafood seasoning
3-4 eggs

Preheat the oven to 375 degrees F and oil two baking sheets. In a food processor, place walnuts and process until finely chopped. Remove from food processor and place in a large bowl. Place toast in food processor and process to make breadcrumbs. Place breadcrumbs, parsley, cilantro and seafood seasoning in bowl with walnuts and mix together thoroughly. Place onion, garlic and celery into food processor and process until finely chopped. Add eggs to food processor bowl and process again. Take egg mixture and add to walnut mixture. Combine entirely. Roll the mixture into 2 inch balls, flatten slightly and place on baking sheets with 1 inch of space between “crab” cakes. Bake on one side for 10-14 minutes then flip over and bake other side. Bake cakes until browned and entirely cooked. Serve hot.
