1 ripe avocado
1 teaspoon parsley
1 teaspoon thyme
1 teaspoon basil
1 teaspoon chives
1 tablespoon lemon juice
6 tablespoons extra virgin olive oil
Cut the avocado in half longitudinally and remove pit. Scoop avocado flesh out of skin with a spoon and dice the avocado flesh. Place parsley, thyme basil, lemon juice, olive oil and chives in bowl and whisk together. When ready to serve, pour herbed olive oil mixture over diced avocado. Serve at room temperature or chilled.
