1 medium chopped onion
1 medium chopped green pepper
1 tablespoon oil
1 medium chopped tomato
1 pound fresh spinach
¼ cup peanut butter
Salt and Pepper to taste
Add onion and green pepper to vegetable oil in 3-quart saucepan. Gently simmer until onion is tender. Add tomato and spinach to pot. Cover and simmer until spinach is tender. Stir in salt, pepper and peanut butter. Heat gently until peanut butter melts. Serve warm.
