INGREDIENTS AND DIRECTION
2 tablespoons grated fresh ginger
4 cups vegetable stock
3/4 teaspoon salt
1 tablespoon cumin
Juice of one lemon
½ teaspoon salt
¼ teaspoon black pepper
Additional Salt and Pepper to taste
Fresh coriander leaves
 
Put grated ginger, salt, cumin, pepper and vegetable stock into a pot and allow the contents to boil. Simmer 30 minutes or until the amount of fluid in the pot has reduced by half. Simmer for another 2 minutes. Add lemon juice and check for taste. Add additional salt and pepper as needed. Garnish with coriander.
NOTE
Adrak has been used as cold remedy in India for ages. It probably won’t shorten the length of your cold, but this tasty soup may make you feel better.
