2 tablespoons grated fresh ginger
4 cups vegetable stock
3/4 teaspoon salt
1 tablespoon cumin
Juice of one lemon
½ teaspoon salt
¼ teaspoon black pepper
Additional Salt and Pepper to taste
Fresh coriander leaves
Put grated ginger, salt, cumin, pepper and vegetable stock into a pot and allow the contents to boil. Simmer 30 minutes or until the amount of fluid in the pot has reduced by half. Simmer for another 2 minutes. Add lemon juice and check for taste. Add additional salt and pepper as needed. Garnish with coriander.
