7 slices of vegetarian bacon
8 inch pastry shell
1 diced onion
½ cup of chopped broccoli
1 cup light cream
1 cup grated gruyere cheese
3 eggs
Scant ¼ teaspoon salt
½ teaspoon pepper
Preheat oven to 350 degrees F and place the pan with the pastry shell on a baking sheet to avoid drips. Place olive oil in a skillet and cook vegetarian bacon until crisp. Remove from skillet, pat dry and place in pastry shell’s bottom. Cook onion and broccoli in skillet until vegetables are softened, then place in pastry shell with cheese. In a separate bowl, whisk eggs, cream, salt and pepper together and pour into pastry shell. Place in oven and bake for 30 minutes or until quiche is golden brown and eggs are fully set. Serve warm.
